Levain (4.5%) - Mixed culture sour ale brewed with sourdough and whole grain breads from Big Sky Bread (Wilmington, DE) and floor malted Pilsner and rye malts from Deer Creek Malthouse (Glen Mills, PA). The use of bread in the mash contributes a touch of salinity, a soft full texture, and melanoidins to the sour ale. Tasting notes of lemon, apricot, mineral water, and sourdough rye bread.
